Day 8 – The 30 Day Paleo Challenge

Today’s post proves that eating Primal can not only be healthy but can look and taste exceptional. The highest regarded food critic would think these dishes are beyond excellent. We (Hayley and Bill) share our experiences of grain free cooking with others through our website, The Food Lovers’ Primal Palate. We enjoy taking classic recipes and “primalizing” them to share with others as inspiration to continue eating a grain free/dairy free/ refined sugar free diet. Although the paleo diet is a lifestyle for us, we often feed into our 20% by indulging in grain free desserts that we share on our website. When we heard about CrossFit Love’s 30 Day Paleo Challenge, we decided to take it upon us to rid ourselves, and the blog, of “paleo” treats for the next 30 days. We wanted to contribute to the CrossFit Love challenge by sharing a full day’s worth of clean paleo meals, that are simple to create and downright sexy on your plate. For anyone who thought Paleo couldn’t be gourmet, think again! For those of you needing some foodie inspiration, this one is for you. We want to send out a huge thank you to Joe for asking us to contribute to this challenge. We are honored to offer some delicious recipes in the name of health and killer body composition!

BreakFast: Root Vegetable Hash with Poached Egg

Roasted root vegetables are a delicious way to add color and flavor to any meal. For this recipe we chose beets and turnips, along with onion, garlic, and rosemary to add some warmth to the flavors of dish. Pair the root vegetables with your egg of choice, whether it be poached, fried, or scrambled. This is a simple way to spice up your everyday breakfast, that will leave your taste buds wanting more.

Lunch: Spring Slaw with Smoked Shrimp

This spring salad is a simple way to bring flavor and elegance to your kitchen table. The smokey flavor of the paprika brings this dish to life. The fresh vegetable slaw adds additional color and wonderful crunch to the sautéed shrimp, and the hint of bacon enhances the smokey flavors of the shrimp beautifully. This lunch dish is one that you can awe your house guests with, or simple enjoy on your own.

Seared Beef Tenderloin with Balsamic Drizzle

Beef tenderloin is an indulgence that is often reserved only for special occasions. The cilantro and mint bring about a freshness to this recipe that compliment the deep, complex flavors of the seasoned filet. To complete the meal we accompanied the filet with the light flavor and crisp texture of blanched asparagus. This gourmet meal will be sure to impress any loved one or guest, no matter the occasion.
